These granola bars are healthy and nutritious quick bites full of energy to get you going. They make a great everyday snack or grab-and-go breakfast, especially for busy pregnant or breastfeeding women.
I adapted this recipe from Ina Garten’s homemade granola bars. Depending on your taste, you can use nuts and dried fruits of your choice. This recipe doesn’t require a lot of work and is so simple and easy yet so delicious!
Ingredients:
1 cup quick-cooking whole grain oatmeal
1 cup almonds
1 cup walnuts
1/2 cup dates
1/2 cup apricots
1/2 cup cranberries
1/2 cup sunflower seeds
1/2 cup brown sugar
2/3 cup honey
1/4 cup butter
1 tsp vanilla essence
1/4 tsp salt
Instructions:
1. Roast the almonds, walnuts and oat flakes separately in the preheated oven for 8-10 minutes. Pound the nuts into small pieces.
2. Cut the dates, apricots and cranberries into small, bite-sized pieces or chop them in the food processor.
3. Mix oats, nuts, dried fruits, salt and sunflower seeds in a bowl.
4. Melt the butter in a saucepan over medium heat. Add the brown sugar and stir until it dissolves and the mixture comes to a boil. Remove from heat, add honey and vanilla essence.
5. Now pour this butter mixture over the dried fruit and nut mixture in the bowl. Mix everything together with a silicone spatula.
6. Pour this into a baking pan lined with baking paper. Place another piece of baking paper on top and press it lightly so that it spreads evenly. Bake in a preheated oven at 180°C for 25 – 30 minutes until lightly golden brown. Allow it to cool for at least a few hours before cutting into squares or rectangular bars. Enjoy as a snack.
