Almond Ragi String iA sweet drink specially prepared for Iftar (dinner at the end of the fasting day) in Ramadan. It is an energy drink made from ground almonds, ragi flour (red millet), milk and sugar. It is so invigorating and refreshing to break your fast with this drink.
This sweet Harira drink comes in many variations. It is also made by cooking ground almond paste with a little water and adding milk and sugar. It is then tempered in ghee with cloves and green cardamom and served warm. You can also enjoy it chilled.
The version below has a different taste due to the ragi flour (millet flour) and is very nutritious. Growing up, I enjoyed the Harira every Ramadan and still love it.
INGREDIENTS:
1/4 cup ragi flour (red millet).
2 cups whole milk
25 almonds
4 tablespoons sugar or more
1/8 tsp ground green cardamom
To garnish:
Almonds
Pistachios
dried figs
dried apricots
golden raisins
INSTRUCTIONS:
1. Soak the almonds in water for a few hours, peel them off and grind them into a paste. Set aside.
2. Mix the ragi flour with a little water to a smooth consistency without any lumps. Strain, discard any leftovers and keep the ragi milk aside.
3. In a saucepan, add 2 cups whole milk, ground almonds and sugar and bring to a boil over medium heat. Now add the ragi milk while stirring constantly until it gets a smooth consistency. Ragi tends to curdle easily, so don’t stop stirring.
4. Reduce heat and simmer for 2-3 minutes. Don’t let it stick to the bottom of the pan, so keep stirring even while it’s simmering. If the mixture is too thick, add a little more milk until the desired consistency is reached. Sprinkle the ground cardamom on top, mix well and let cool.
5. Pour into a glass, top with nuts and dried fruits and enjoy!
NOTES:
There are many variations of this recipe.
1. You can also use whole ragi instead of ragi flour. However, you need to soak it overnight or at least 4 hours before grinding it to extract the milk.
2. Soak the almonds with a teaspoon of white basmati rice, grind them into a paste and add it to the strained ragi milk and bring everything to the boil. This gives it a different taste.
3. The addition of poppy seed paste also improves the taste and aroma, making this drink richer and more nutritious.
